Khichdi is a very healthy dish that is generally prepared with rice and dal and some spices. In my Khichdi recipe I have added potatoes and cooked it hardly with any spices. This delightful recipe can be savored with any type of curry or sauce or just enjoy it as it is. It can be prepared in less time. Here I am sharing my yummy recipe of Potato Khichdi.
Time for Preparation : 10 minutes
Time for cooking : 30 minutes
Serves 4 People
Ingredients for Potato Khichdi
1 cup Moong Dal (green gram)
1 cup Masoor Dal (red lentils)
2 cup Rice (small grain preferred)
2 Onions (sliced)
4 big Potatoes (cubed)
2 big Tomatoes (cubed)
5 cups of Water
1 tsp Turmeric Powder
2 tbsp Mustard oil
Salt to taste
How to make Potato Khichdi
Take the rice, moong dal and masoor dal and mix them together. Wash them together properly and drain the water away.
Heat oil in a degchi or a heavy bottom vessel. (Any oil can be used but I recommend mustard oil as the same gives boom to the taste).
Now add the sliced onions and sauté for few minutes or until it turns transparent.
Add the cubed potato and stir fry everything for near about 7 minutes.
Now add the rice and dal mixture to the pan and sauté for 5 more minutes.
Add the chopped tomatoes now.
Saute everything together for 5 minutes more.
Now add the water.
Add the turmeric powder and salt to taste now and stir everything properly.
Let the khichdi boil and cook it with constant stirring.
Once the rice, dal and potatoes are cooked properly and the khichdi reaches the right consistency. Yummy Potato Khichdi is now ready.
Serve it hot with your favorite curry or just enjoy it as it is. You can also garnish the same with some green chilies and coriander leaves.
